<p>Eine warme und einfache Mahlzeit ist doch optimal, um den knurrenden Magen zu stillen. Mein veganer Gnocchi Auflauf mit Brokkoli ist schön cremig und hat eine leichte Kokosnote. Lass dich davon nicht verscheuchen, es harmoniert so gut mit den restlichen Zutaten und hinterlässt einen himmlischen Geschmack!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Wodurch wird die Soße cremig?</h2>



<p>In diesem Rezept habe ich mit einer Mehlschwitze gearbeitet: Dabei schmilzt du vegane Butter in einem Topf und gibst anschließend etwa die gleiche Gramm-Zahl Mehl hinzu. Das wird zu einer einheitlichen Mehlschwitze verrührt. Die flüssigen Zutaten kannst du dann nach und nach einrühren und aufkochen, wodurch eine schöne dickflüssige Konsistenz entsteht!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Kann ich auch mit Stärke arbeiten?</h2>



<p>Statt einer Mehlschwitze verwende ich auch hin und wieder einfach nur Kartoffelstärke. Dafür gibst du einen Teil deiner Flüssigkeit in den Topf und siebst, unter ständigem Rühren, etwas Stärke hinein. Stelle die Temperatur nach oben und rühre konstant weiter, damit keine Klümpchen entstehen. Sobald du merkst, dass sie Masse leicht andickt, solltest du sofort die restliche Flüssigkeit hinzugeben! Wenn du zu lange wartest wir die Flüssigkeit zu fest und du hast letztendlich nur noch einen schleimigen Klumpen Stärke.</p>



<p><strong>Tipp:</strong> Taste dich mit der Stärkemenge heran, so viel wird nicht benötigt! Auf 500ml Wasser würde ich nur einen gehäuften Teelöffel verwenden. Sollte es nach längerer Zeit nicht andicken, kannst du noch etwas mehr dazu sieben. </p>



<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Anleitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Soße anrühren</h3>



<p>Für die Soße schmilzt du die vegane Butter in einem Topf. Als nächstes gibst du das Mehl dazu und verrührst die beiden Zutaten, mit Hilfe eines Schneebesens, zu einer einheitlichen Mehlschwitze. Es sollten keine Mehlklümpchen mehr enthalten sein. Anschließend kommen nach und nach die flüssigen Zutaten dazu. Lass die Soße zwischendurch immer wieder aufkochen, damit sie leicht andicken kann. Danach kommen die restlichen Zutaten hinzu: Lass die Soße leicht weiter köcheln, bis du sie weiter benötigst! Vergiss nicht, hin und wieder umzurühren!</p>



<h3 class="wp-block-heading">2. Schritt: Gemüse zerkleinern</h3>



<p>Zerkleinere den Brokkoli in kleine Röschen. Auch den Stiel kannst du hierbei verwenden, du musst lediglich den holzigen Rand entfernen! Schneide die Zwiebel in kleine Würfel.</p>



<h3 class="wp-block-heading">3. Schritt: Auflauf backen</h3>



<p>Im letzten Schritt treffen nun alle Zutaten aufeinander. Verrühre Gnocchi, Brokkoli, Zwiebel, Kichererbsen, Kidneybohnen und die Soße miteinander. Du kannst das entweder in einer separaten großen Schüssel machen oder direkt in der Auflaufform! Bei einer großen Form geht das perfekt gleich darin und du sparst dir Abwasch. Backe deinen Auflauf bei <strong>180°C Umluft</strong> für <strong>40 Minuten</strong>. Guten Appetit!</p>

<p>Polenta-Fans aufgepasst! Ich habe hier ein Rezept, welches von der normalen Zubereitung und Verarbeitung von Polenta mal etwas abweicht: Und das ist ein einfacher veganer Polenta-Auflauf mit Bohnen, Möhren und Erbsen.</p>



<h2 class="has-black-color has-text-color wp-block-heading">Wie lange braucht die Zubereitung der Polenta-Masse?</h2>



<p>Meine Polenta war nach 5 Minuten fertig. Die Zeit kann natürlich abweichen, je nachdem wie hoch du die Temperatur einstellst. Rechen mit einer durchschnittlichen Zeit von 5-10 Minuten. Ganz wichtig ist, dass du, nachdem das Wasser aufgekocht ist, konstant weiterrührst. Die Polenta-Masse sollte nicht am Boden kleben bleiben!</p>



<p><strong>Wichtig:</strong> Decke die Polenta ab, sobald sie fertig zubereitet ist. Wenn sie auskühlt wird sie fest, wodurch du mehr Mühe hast, die zweite Schicht auf den Auflauf zu verteilen! Deshalb lieber warm halten.</p>



<h2 class="has-black-color has-text-color wp-block-heading">Kann ich Polenta beliebig würzen?</h2>



<p>Na klar! Ich fand für diese Kombination der Polenta die Variante mit Basilikum, Oregano und Muskatnuss passend. Ich würde dir auch empfehlen die Muskatnuss immer hinein zu machen, mit den anderen Gewürzen kannst du jedoch beliebig variieren und dich ausprobieren.</p>



<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Anleitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Soße zusammenrühren</h3>



<p>Als erstes schüttest du den Pflanzendrink deiner Wahl und die vegane Kochsahne in einen Topf. Dazu kommen sie restlichen Zutaten für die Soße. Danach sibst du unter ständigem Rühren die Stärke hinein und lässt die Soße aufkochen, bis sie leicht andickt. Bis zur Weiterverwendung köcheln lassen und ab und zu umrühren nicht vergessen!</p>

<h3 class="wp-block-heading">2. Schritt: Polenta herstellen</h3>



<p>Gib alle Zutaten für die Polenta-Schicht in einen Topf und lass das Wasser aufkochen. Danach stellst du die Temperatur ein wenig nach unten und rührst, während das Wasser köchelt, die Polentamasse um. Pass auf, dass der Grieß nicht am Boden festbäckt. Sobald das komplette Wasser aufgesogen wurde stellst du die Temperatur ab und deckst den Topf ab. </p>



<p>Wichtig: Stell die Temperatur nicht zu hoch, da du dich sonst an den heißen Blubberblasen verbrennst!</p>

<h3 class="wp-block-heading">3. Schritt: Gemüse schneiden</h3>



<p>Gib die tiefgefrorenen Bohnen in eine Schüssel und spüle sie mit heißem Wasser, bis sie aufgetaut sind. Danach lässt du das Wasser abtropfen. Schäle und schneide die Möhren und Zwiebeln in kleine Stücke. Heize den Ofen auf 190°C vor.</p>

<h3 class="wp-block-heading">4. Schritt: Auflauf schichten</h3>



<p>Nun fängt das Schichten des Auflaufs an: Nimm die Hälfte deiner fertigen Polenta-Masse und verteile sie in deiner Auflaufform. Verrühre die Bohnen und Zwiebeln in der fertigen Soße und verteile sie auf der Polenta. Darauf kommen die Möhren, gefolgt von den Erbsen und der restlichen Polentahälfte. Schön glattstreichen und die Röstzwiebeln darauf verteilen. Dein veganer Polenta-Auflauf wird jetzt für 35 Minuten auf mittlerer Schiene im Ofen gebacken. </p>



<p><strong>Tipp: </strong>Schau in den letzten 5 Minuten nochmal rein und versichere dich, dass deine Röstzwiebeln nicht zu dunkel werden: Dann entweder den Ofen abstellen oder den Auflauf mit Alufolie abdecken.</p>
