<h2 class="has-black-color has-text-color wp-block-heading">Was ist Stollen?</h2>



<p>Stollen ist ein brotförmiges Gebäck, welches überwiegend in der Weihnachtszeit gebacken wird. Neben dem normalen Rosinenstollen kann man ihn auch mit Marzipanrohmasse verfeinern oder einen Mohnstollen backen, welcher jedoch keine Rosinen enthält. <h2 class="has-black-color has-text-color wp-block-heading">Woher weiß ich, ob der Stollen durchgebacken ist?</h2>



<p>Mein veganer Stollen wurde im vorgeheizten Ofen bei 180°C Umluft gebacken. Wenn du dir nicht sicher bist, ob dein Stollen bereits fertig ist, nimmst du dir einen Zahnstocher oder einen anderen Holzspieß und pickst einfach einmal tief in die Mitte hinein. Ziehst du den Spieß raus und es hängt roher Teig daran, dann muss er noch etwas backen. Wenn er nahezu sauber wieder herauskommt, ist er fertig!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Was ist, wenn der Stollen während des Backvorgangs zu dunkel wird?</h2>



<p>Der Stollen bäckt und bäckt, wird immer dunkler, ist aber noch nicht durchgebacken? Nimm dir einfach ein Stück Alufolie und decke den Stollen damit ab!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Zubereitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Rosinen einweichen</h3>



<p>Schütte die Rosinen und Cranberrys, einen Tag (oder ein paar Stunden) vor der Zubereitung, in eine Schüssel. Bedecke sie vollständig mit Wasser und gib nach Belieben Rum-Aroma hinein: Ich habe die Hälfte eines kleinen Fläschchens hinzugegeben. Einmal umrühren und bis zur Weiterverarbeitung stehen lassen.</p>



<h3 class="wp-block-heading">2. Schritt: Teig anrühren</h3>



<p>Verrühre das Mehl, die gehackten Mandeln, Backpulver, Vanillezucker und das Stollengewürz in einer großen Schüssel. Als nächstes zerkleinerst du die Datteln in einer Küchenmaschine und lässt die eingeweichten Rosinen in einem Sieb abtropfen. Diese werden dann, ebenso wie die restlichen Zutaten, zu der Mehlmischung gegeben. Wenn du möchtest, kannst du auch etwas Orangenaroma hinzufügen, das verstärkt nochmals den weihnachtlichen Geschmack. Nimm dir einen leistungsfähigen Mixer oder eine Küchenmaschine und lass den Teig für etwa 5-10 Minuten kneten.</p>



<h3 class="wp-block-heading">3. Schritt: Ofen vorheizen</h3>



<p>Heize den Backofen auf 180°C Umluft vor.</p>



<h3 class="wp-block-heading">4. Schritt: Stollen formen</h3>



<p>Lege ein Backblech mit Backpapier aus und forme zwei ovale Stollen. Mach sie nicht zu breit bzw. flach, da er sonst trocken wird! (Ich habe zwar einen großen Stollen geformt, würde dir aber jetzt im Nachhinein empfehlen, eher zwei kleinere zu machen. Sie sind einfach handlicher und können gut eingepackt werden.) Drücke die oberen Rosinen in den Teig, damit sie dir beim backen nicht verbrennen!</p>

<h3 class="wp-block-heading">5. Schritt: Rosinenstollen backen</h3>



<p>Nachdem du deine zwei Stollen geformt hast, bäckst du sie auf der untersten Schiene für 1 Stunde im Ofen. Schau zwischendurch mal rein, ob sie mit einer Alufolie abgedeckt werden sollten, damit sie nicht zu dunkel werden.</p>



<h3 class="wp-block-heading">6. Schritt: Einstreichen und Abkühlen lassen</h3>



<p>Sobald der Stollen fertig gebacken ist, lässt du ihn für 10 Minuten auskühlen. Danach bestreichst du ihn mit der geschmolzenen Butter und gibst anschließend eine Schicht Puderzucker darüber. Jetzt kannst du ihn vollkommen abkühlen lassen. Sobald der Stollen kalt ist, puderst du ihn mit einer zweiten Schicht Puderzucker ein und kannst ihn zum Kaffee genießen!</p>

Bedecke sie vollständig mit Wasser und gib nach Belieben Rum-Aroma hinein: Ich habe die Hälfte eines kleinen Fläschchens hinzugegeben. Einmal umrühren und bis zur Weiterverarbeitung stehen lassen.</div></li><li id="wprm-recipe-1118-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Verrühre das Mehl, die gehackten Mandeln, Backpulver, Vanillezucker und das Stollengewürz in einer großen Schüssel. Als nächstes zerkleinerst du die Datteln in einer Küchenmaschine und lässt die eingeweichten Rosinen in einem Sieb abtropfen. Diese werden dann, ebenso wie die restlichen Zutaten, zu der Mehlmischung gegeben. Füge etwas Orangenaroma hinzu, nimm dir einen leistungsfähigen Mixer oder eine Küchenmaschine und lass den Teig für etwa 5-10 Minuten kneten.</span></div></li><li id="wprm-recipe-1118-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heize den Backofen auf 180°C Umluft vor.</div></li><li id="wprm-recipe-1118-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Lege ein Backblech mit Backpapier aus und forme zwei ovale Stollen. Mach sie nicht zu breit bzw. flach, da er sonst trocken wird! (Ich habe zwar einen großen Stollen geformt, würde dir aber jetzt im Nachhinein empfehlen, eher zwei kleinere zu machen. Sie sind einfach handlicher und können gut eingepackt werden.)</div></li><li id="wprm-recipe-1118-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Nachdem du deine zwei Stollen geformt hast, bäckst du sie auf der untersten Schiene für 1 Stunde im Ofen. Schau zwischendurch mal rein, ob sie mit einer Alufolie abgedeckt werden sollten, damit sie nicht zu dunkel werden.</div></li><li id="wprm-recipe-1118-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Sobald der Stollen fertig gebacken ist, lässt du ihn für 10 Minuten abkühlen. Danach bestreichst du ihn mit der geschmolzenen Butter und gibst gleich danach eine Schicht Puderzucker darüber. Anschließend vollkommen auskühlen lassen. Sobald der Stollen kalt ist, puderst du ihn mit einer zweiten Schicht Puderzucker ein und kannst ihn genießen!</span></div></li></ul></div></div>

<p>Weihnachtszeit ist Stollenzeit! Das besondere an diesem Stollen Rezept ist, dass es einerseits vegan ist, andererseits nur wenig industriellen Zucker enthält und gleich, nachdem der Stollen abgekühlt ist, genossen werden kann. Keine lange Lagerung, schnell und einfach zubereitet! Ein super saftiges veganes Stollen-Rezept, welches sicherlich auch ein schönes Geschenk für deine Familie ist…</p>



<h3 class="wp-block-heading">Wie viele Stollen bekomme ich aus der Standard Menge? (1kg Mehl)</h3>



<p>Ich habe aus dieser Menge einen großen Stollen gebacken! Wenn du eher zwei Kleine haben möchtest, ist das kein Problem: Forme einfach zwei verschiedene Stollen auf einem mit Backpapier ausgelegten Backblech. Achte darauf, dass du den Stollen nicht zu flach formst, da er sonst eventuell nicht mehr so saftig wird. Außerdem <strong>kann sich die Backzeit um ein paar Minuten verkürzen</strong>, wenn du statt einem dickeren großen Stollen, zwei kleine formst! Also schau hin und wieder mal in den Ofen und decke den Stollen mit Alufolie ab, wenn er zu dunkel wird&#8230;</p>



<h3 class="wp-block-heading">Wie lagere ich Stollen?</h3>



<p>Lagere deinen Stollen an einem kühlen und trockenen Ort. So hält er sich besser und kann ordentlich durchziehen!</p>

<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Anleitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Rosinen einweichen</h3>



<p>Schütte die Rosinen, einen Tag (oder ein paar Stunden) vor der Zubereitung, in eine Schüssel. Bedecke sie vollständig mit Wasser und gib nach Belieben Rum-Aroma hinein: Ich habe die Hälfte eines kleinen Fläschchens hinzugegeben. Einmal umrühren und bis zur Weiterverarbeitung stehen lassen.</p>



<h3 class="wp-block-heading">2. Schritt: Teig herstellen</h3>



<p>Am nächsten Tag gibst du alle Zutaten für den Teig, außer dem Marzipan, in eine große Rührschüssel. Lass den Teig für 5-10 Minuten in einer Küchenmaschine kneten oder benutze deine Hände. Schneide das Marzipan in kleine Würfel: Danach stellst du die Geschwindigkeit auf eine mittlere Stufe und gibst nach und nach das Marzipan zum Teig dazu. Die Küchenmaschine kann das langsam unterrühren: Drücke, wenn nötig, die Seiten etwas nach unten, damit alles ineinander verknetet wird.</p>



<h3 class="wp-block-heading">3. Schritt: Stollen formen und backen</h3>



<p>Heize den Backofen auf 180°C Umluft vor. Lege dir eine Backform mit Backpapier aus oder fette dir deine Stollenform ein. Verstreiche darin den Teig und schiebe ihn für 1h in den Ofen. Ich habe einen großen Stollen gebacken: Du kannst natürlich auch zwei kleinere Stollen formen und auf einem Backblech backen!</p>



<h3 class="wp-block-heading">4. Schritt: Bestreichen und auskühlen lassen</h3>



<p>Danach lässt du ihn für etwa 10 Minuten abkühlen und streichst ihn anschließend mit geschmolzener Butter ein. Jetzt wird er mit einer Schicht Puderzucker eingepudert und kann komplett abkühlen… Sobald er kalt ist, kannst du ihn nochmals mit Puderzucker aufpeppen und vernaschen!</p>

Schneide derweil das Marzipan in kleine Würfel: Danach stellst du die Geschwindigkeit auf eine mittlere Stufe und gibst nach und nach das Marzipan zum Teig dazu.</span></div></li><li id="wprm-recipe-1395-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Heize den Backofen auf 180°C Umluft vor. Lege dir eine Backform mit Backpapier aus oder fette dir deine Stollenform ein. Verstreiche darin den Teig und backe ihn für 1h im Ofen. Entweder du bäckst einen großen oder 2 normale Stollen.</span></div></li><li id="wprm-recipe-1395-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Danach lässt du ihn für etwa 10 Minuten abkühlen und streichst ihn anschließend mit geschmolzener Butter ein. Gleich danach wird er mit einer Schicht Puderzucker eingepudert! Jetzt kann er komplett abkühlen… Sobald er kalt ist, kannst du ihn nochmals mit Puderzucker aufpeppen und vernaschen!</div></li></ul></div></div>
