<p>Die Zucchinizeit geht langsam zu Ende, doch in unserem Keller haben wir noch einige große Früchte gelagert! Diesmal gibt es ein super einfach zuzubereitendes veganes Rezept: Gefüllte Zucchini mit Hirse, Mangold und Möhren&#8230;</p>

<h3 class="wp-block-heading" id="schritt-fur-schritt-anleitung">1. Schritt: Gemüse schneiden</h3>



<p id="schritt-fur-schritt-anleitung">Als Erstes wäschst du deine Zucchini gründlich ab. Teile sie einmal in der Mitte durch und löffele den Inhalt hinaus. Das Innenleben musst du nicht wegschmeißen, du kannst damit auch noch ein anderes Gericht zaubern! Wasche das restliche Gemüse ab und schneide Möhren, Mangold und die getrockneten Tomaten klein. </p>

<h3 class="wp-block-heading" id="2-schritt-hirse-einweichen">2. Schritt: Hirse einweichen</h3>



<p>Heize den Backofen auf 200°C Umluft vor! Bereite anschließend die Hirse zu. Dafür rührst du die Gemüsebrühe in das Wasser ein, schüttest das Wasser mit der Hirse in einen kleinen Topf und lässt es aufkochen. Sobald sich Blasen bilden stellst du den Herd ab und lässt die Hirse für 5 Minuten ziehen. Das Wasser sollte am Ende komplett eingesogen sein, notfalls lässt du es noch etwas länger stehen.</p>



<h3 class="wp-block-heading" id="3-schritt-zucchini-fullen">3. Schritt: Zucchini füllen</h3>



<p>Als letztes bereitest du die Soße vor. Dafür verrührst du Milch, Tomatenmark, Hefeflocken und Senf in einem Gefäß. Etwas Salz und Pfeffer hinzugeben und schon bist du fertig!</p>



<p>Nun vermischst du alle deine Zutaten in einer großen Schüssel! Auch die Soße kommt mit hinein. Anschließend verteilst du die Mischung auf die Zucchinihälften auf und gibst noch etwas veganen Käse darüber. Das Ganze kommt nun auf der untersten Schiene in den Ofen und wird für 40 Minuten gebacken.</p>

<p>Sollte die Oberfläche während des Backens zu dunkel werden, legst du einfach ein Papier Alufolie darüber.</p>

<p>Wenn man diese kleinen Nougatkügelchen isst, würde man niemals herausfinden, dass darin ein halbes Kilo Zucchini verarbeitet ist! Doch wenn Zucchinis massenhaft im Garten liegen oder preisgünstig zu kaufen sind, ist dieses Rezept durchaus eine schöne und außergewöhnliche Abwechslung gegenüber der „normalen“ Zucchinirezepte.</p>



<h2 class="has-black-color has-text-color wp-block-heading" id="auf-was-musst-du-achten">Auf was musst du achten?</h2>



<p>Die Zucchinis gehören zur Familie der Kürbisgewächse, sind kalorienarm und enthalten sehr viel Wasser. Aufgrund der hohen Wassermenge ist es wichtig, dass du die Zucchini ordentlich ausdrückst, bevor sie zu den anderen Zutaten hinzugefügt wird. Sonst wird dein Teig viel zu nass und die Konsistenz deiner Bällchen verändert sich.</p>



<p>Bitter schmeckende Zucchini solltest du sofort in den Müll geben. Die Bitterstoffe sind giftig und können schwere Folgen nach sich ziehen. Also vor der Verarbeitung eine kleine Kostprobe machen und sofort ausspucken, wenn sie bitter schmeckt!</p>

<h3 class="wp-block-heading" id="1-schritt-zucchini-vorbereiten">1. Schritt: Zucchini vorbereiten</h3>



<p>Heize den Backofen vor: 180°C Ober-/Unterhitze. Wasche die Zucchini gründlich ab und rasple sie klein. Je kleiner du die Zucchini verarbeitest, desto weniger Stücken hast du am Ende in den Bällchen. Winde sie danach in einem sauberen Küchentuch aus, damit möglichst viel Flüssigkeit austreten kann.</p>

<h3 class="wp-block-heading" id="2-schritt-teig-backen">2. Schritt: Teig backen</h3>



<p>Zerkleinere die Datteln mithilfe einer Küchenmaschine und erwärme 125g Nougat in der Mikrowelle. Gebe nun alle Zutaten, auch die Zucchini, in eine Schüssel und verbinde alles zu einem Teig. Dieser sieht jetzt noch nicht besonders appetitlich aus, aber es wird sich lohnen! Verteile den Teig auf einem kleinen Blech (30cm*20cm) oder in einer runden Springform (Durchmesser 28cm) und schiebe es für 25 Minuten in den Ofen.</p>

<h3 class="wp-block-heading" id="3-schritt-ballchen-formen">3. Schritt: Bällchen formen</h3>



<p>Der Teig sollte nach dem Backen noch eine gut formbare Konsistenz haben, demnach nicht zu trocken sein! Sobald der Teig etwas abgekühlt ist fängst du an, kleine Bällchen zu formen: Stelle die fertigen Kügelchen in den Kühlschrank.</p>

<h3 class="wp-block-heading" id="4-schritt-einhullen">4. Schritt: Einhüllen</h3>



<p>Erwärme den restlichen Backnougat (250g) und die Schokolade in einem dafür vorgesehenen Gerät oder über einem Wasserbad. Tauche jedes Bällchen einzeln erst in die Schokoladenmasse und danach in ein kleines Gefäß mit Kokosflocken. Ich empfehle dir, mit einer Gabel ein bisschen Schokolade abzustreichen, so läuft sie danach nicht unkontrolliert herunter. Lege die Kügelchen mit Hilfe einer sauberen Gabel auf ein Brett und warte, bis sie fest werden.</p>

<p>Die Zucchini Bällchen sind sowohl bei Zimmertemperatur, als auch gekühlt zu genießen. Gekühlt sind sie dabei eher „Pralinenartig“.</p>

Ich empfehle dir, mit einer Gabel ein bisschen Schokolade abzustreichen, so läuft sie danach nicht überschüssig herunter. Lege die Kügelchen auf ein Brett und kühle sie. Die Zucchini Bällchen sind sowohl bei Zimmertemperatur, als auch gekühlt zu genießen. Gekühlt sind sie eher „Pralinenartig“.</span></div></li></ul></div></div>
