<h2 class="has-black-color has-text-color wp-block-heading">Wie lange sind die Kekse haltbar?</h2>



<p>Darüber würde ich mir keine großen Gedanken machen. Ich wette mit dir, dass sie schneller aufgegessen sind, als das sie schlecht werden können. Die Plätzchen halten auf jeden Fall mindestens 2-3 Wochen! Du kannst sie auch in kleinen Tütchen zusammenpacken und als Weihnachtsgeschenk deiner Familie eine Freude bereiten.</p>



<h2 class="has-black-color has-text-color wp-block-heading">Was mache ich mit den Ausstech-Resten?</h2>



<p>Schiebe sie zu einer Kugel zusammen und zupfe dir immer eine kleine Portion Teig ab. Darauf formst du eine kleine Kugel und drückst mit dem Daumen eine Mulde hinein. Lege dein Keks auf ein mit Backpapier belegtes Blech und fülle die Mulde mit etwas Marmelade deiner Wahl. Ich habe Johannisbeer-Marmelade verwendet und es war super lecker! So hast du aus deinen Restern ein paar tolle marmoriere Plätzchen gemacht.</p>

<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Anleitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Teig vorbereiten</h3>



<p>Für den Plätzchenteig gibst du Mehl und Puderzucker zusammen in eine Schüssel und verrührst sie miteinander. Dazu kommt die vegane Butter und Vanillepaste und werden durch ein Handrührgerät mit Knethacken zu einem einheitlichen Teig verknetet. Trenne die Hälfte des Teiges ab und knete in einen der beiden das Kakaopulver hinein. Forme jeweils eine große Kugel und lass den Teig für <strong>30 Minuten</strong> abgedeckt im Kühlschrank <strong>ruhen</strong>.</p>



<h3 class="wp-block-heading">2. Schritt: Kekse ausstechen</h3>



<p>Danach knetest du den dunklen Teig kurz durch und rollst ihn auf einer bemehlten Arbeitsfläche aus. Verteile das fertige Mohnfix darauf und streiche es so glatt wie möglich. Nun rollst du den hellen Teig auf einer Frischhaltefolie aus und versuchst, so gut wie möglich die Form des dunklen Teiges zu treffen. Stülpe ihn nun auf deine Hände und lege den Teig auf das Mohnfix. Kurz ein wenig andrücken und schon kannst du deine Kekse ausstechen!</p>

<h3 class="wp-block-heading">3. Schritt: Reste verarbeiten</h3>



<p>Die &#8222;Ausstech-Reste&#8220; kannst du zu einer großen Kugel zusammenschieben. Zupfe dir davon etwas Teig ab, forme eine kleine Kugel und drücke eine Mulde hinein. Lege dies auf ein Backpapier und fülle z.B. etwas Johannisbeer-Marmelade hinein.</p>

<h3 class="wp-block-heading">4. Schritt: Plätzchen backen</h3>



<p>Heize den Ofen auf <strong>160°C Umluft </strong>vor. Backe die Plätzchen für <strong>15min.</strong> und lass sie anschließend auf dem Blech abkühlen. Du kannst sie noch mit ein paar Schokoladenfäden verzieren und dann genießen!</p>

Dazu kommt die vegane Butter und Vanillepaste und werden durch ein Handrührgerät mit Knethacken zu einem einheitlichen Teig verknetet. Trenne die Hälfte des Teiges ab und knete in einen den Kakao hinein. Forme jeweils eine große Kugel und lass den Teig für 30min. abgedeckt im Kühlschrank ruhen.</span></div></li><li id="wprm-recipe-4089-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Knete den dunklen Teig kurz durch und rolle ihn auf einer bemehlten Arbeitsfläche aus. Verteile das fertige Mohnfix darauf. Nun rollst du den hellen Teig auf einer Frischhaltefolie aus und versuchst, so gut wie möglich die Form des dunklen Teiges zu treffen. Stülpe ihn auf deine Hände und lege den Teig auf das Mohnfix. Kurz ein wenig andrücken und schon kannst du deine Kekse ausstechen!</span></div></li><li id="wprm-recipe-4089-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Die übrig gebliebenen Reste schiebst du zu einer Kugel zusammen. Zupfe dir Teig ab, forme eine kleine Kugel und drücke eine Mulde hinein. Lege es auf ein Backpapier und fülle z.B. <p>Du benötigst noch ein leckeres veganes Plätzchen-Rezept für die Weihnachtszeit? Diese Haselnuss-Plätzchen sind einfach zu machen und brauchen lediglich 2 Stunden Kühlzeit. Sie passen optimal in die Advents- und Weihnachtszeit!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Wieso müssen die Plätzchen im Kühlschrank ruhen?</h2>



<p>Der Teig ist, nachdem du ihn zusammengerührt hast, nicht sehr fest. Durch die Kühlzeit wird er härter und ist somit später einfacher auszustechen. Nachdem du ihn aus dem Kühlschrank geholt hast, musst du ihn nur noch mal geschmeidig kneten, damit er beim ausrollen nicht einreißt. Achte darauf, dass du genügend Mehl auf der Arbeitsfläche hast, sonst lassen sich die Plätzchen nicht gut davon ablösen.</p>



<h2 class="has-black-color has-text-color wp-block-heading">Wie bekomme ich die Plätzchen von der Arbeitsfläche, wenn der Teig nicht mehr so fest ist?</h2>



<p>Nimm dir am besten eine Palette oder ein großes Messer und fahre einmal unter dem ausgerollten Teig entlang. Du kannst die Plätzchen dann ausstechen und ganz einfach mit deinem Messer anheben. Optimal ist es, wenn du den Teig nach der Kühlzeit in 2 Hälften teilst: Die eine Hälfte rollst und stichst du aus, während die andere noch im Kühlschrank verharren kann. Wenn der Teig zu weich wird, kannst du ihn in den Kühlschrank legen und die andere Hälfte rausnehmen.</p>

<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Anleitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Teig vorbereiten und kühlen</h3>



<p>Schütte das Mehl, die gemahlenen Haselnüsse, Puderzucker und den Vanillezucker in eine Schüssel und verrühre die Zutaten. Danach gibst du die zimmerwarme Butter mit dem Glukosesirup hinein und fügst noch etwas Vanillepaste hinzu. Mit Knethacken zu einem einheitlichen Teig verarbeiten, zu einer Kugel formen und für 2 Stunden in den Kühlschrank stellen.</p>

<h3 class="wp-block-heading">2. Schritt: Teig kneten &amp; einfärben</h3>



<p>Nachdem der Teig durchgekühlt ist, knetest du ihn auf einer bemehlten Arbeitsfläche durch. Wenn du möchtest, kannst du ihn jetzt beliebig einfärben. Er sollte nun schön elastisch sein: Achte darauf, dass du nicht zu lange knetest, da er sonst wieder zu klebrig wird. Heize den Ofen anschließend auf 180°C vor.</p>



<h3 class="wp-block-heading">3. Schritt: Plätzchen ausstechen</h3>



<p>Rolle den Teig auf der bemehlten Arbeitsfläche aus und wähle deine Plätzchenformen. Am besten lässt sich der Teig mit einer Palette auf das Backblech setzen. Schiebe die Plätzchen für 10 Minuten in den vorgeheizten Backofen. Die gebackenen Plätzchen lässt du abkühlen und kannst sie danach entweder verzieren oder so lassen!</p>

Wenn du möchtest, kannst du ihn beliebig einfärben. Er sollte nun schön elastisch sein! Achte darauf, dass du nicht zu lange knetest, da er sonst wieder zu klebrig wird. <p>Fröhliche Weihnachtszeit! Dieses vegane Plätzchen-Rezept kannst du ganz einfach nachbacken und dich als Teil der Weihnachtsbäckerei fühlen. Ich habe sie mit drei verschiedenen Füllungen gefüllt: Verwende einfach deine Lieblingsfüllung und schon kann das Naschen losgehen! Ein einfaches Rezept mit Dattelsüße, statt industriellen Zucker!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Muss der vegane Plätzchen-Teig im Kühlschrank ruhen?</h2>



<p>Nein. Der Vorteil dieses Plätzchenrezepts ist, dass der Teig nicht im Kühlschrank ruhen muss. Er ist nach der Zubereitung so fest, dass er problemlos (auf einer bemehlten Arbeitsfläche) sofort weiterverwendet werden kann. Falls du auf Nummer sicher gehen willst, kannst du ihn natürlich auch für eine halbe Stunde in den Kühlschrank legen: Nach der Kühlzeit ist er aber sehr fest, weshalb du ihn ordentlich durchkneten musst, damit er gut auszurollen geht und keine Risse entstehen.</p>



<h2 class="has-black-color has-text-color wp-block-heading">Wie steche ich den kleineren Kreis aus?</h2>



<p>Ich habe zwei verschieden Größen der Kreisausstecher zu Hause. Wenn das bei dir nicht der Fall ist nimmst du einfach eine andere Form: Du kannst einen klein als Boden nehmen und dann bei dem Deckel einen kleinen Stern oder ein Herz ausstechen! Das ist dir überlassen!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Welche Füllung habe ich verwendet?</h2>



<p>Um eine größere Auswahl an Plätzchen auf den Tellern anzurichten, habe ich mich für drei Füllungen entschieden. Die Erste ist eine vegane weiße Kokoscreme, sie harmoniert super mit den Nougatgeschmack! Meine zweite Variante ist einer Nuss-Nougatcreme, welche den Geschmack der Kekse unterstützt. Als letztes habe ich mich für eine fruchtige Erdbeerkonfitüre entschieden, da sie einen frischen Kick hineinbringt und den Keks nochmal aufpeppt!</p>

<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Zubereitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Vorbereiten</h3>



<p>Zerkleinere die getrockneten Datteln in einer Küchenmaschine. Nebenbei verrührst du alle trockenen Zutaten in einer Schüssel und erwärmst den Backnougat in der Mikrowelle.</p>



<h3 class="wp-block-heading">2. Schritt: Teig zubereiten </h3>



<p>Sobald die Datteln zerkleinert sind, gibst du die weiche Butter, die Datteln und den weichen Backnougat zu der Mehlmischung dazu und verknetest es gründlich. Du kannst dafür auch den Handmixer mit Knethacken verwenden!</p>

<h3 class="wp-block-heading">3. Schritt: Plätzchen ausstechen</h3>



<p>Rolle den Teig auf deiner bemehlten Arbeitsfläche aus und steche Kreise aus. Bei der Hälfte der Plätzchen musst du nur noch einen inneren kleineren Kreis herausstechen, das ist dann später die Oberseite! Zähle die Plätzchen durch und achte darauf, dass du genauso viele Böden wie Deckel hast.</p>

<h3 class="wp-block-heading">4. Schritt: Plätzchen backen</h3>



<p>Heize den Ofen auf 180°C Umluft vor und backe die Plätzchen, auf der untersten Schiene, für 10 Minuten. Anschließend abkühlen lassen.</p>



<h3 class="wp-block-heading">5. Schritt: Zusammensetzen und Füllen</h3>



<p>Sobald die Plätzchen kalt sind, streichst du die Böden mit deiner Lieblingsfüllung ein: Ich habe drei verschiedene verwendet! In der Mitte des Bodens formst du damit ein kleines Hügelchen und drückst den Deckel vorsichtig darauf an.</p>

Zähle die Plätzchen durch und achte darauf, dass du genauso viele Böden wie Deckel hast.</span></div></li><li id="wprm-recipe-1150-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heize den Ofen auf 180°C Umluft vor und backe die Plätzchen, auf der untersten Schiene, für 10 Minuten.
