<p>Wenn du mal eine Abwechslung zu den Standard-Muffin-Varianten möchtest, bist du hier genau richtig! <h2 class="has-black-color has-text-color wp-block-heading">Muss ich Rhabarber schälen?</h2>



<p>Im Rhabarber steckt vergleichsweise viel Oxalsäure, weshalb von dem rohen Verzehr abgeraten wird. Der meiste Teil davon befindet sich in der Schale, was der Grund dafür ist, dass er bei den Rezepten normalerweise geschält wird. Außerdem gilt: Je grüner der Rhabarber, desto mehr Oxalsäure ist darin. Auch die Stängel, die nicht mehr allzu frisch sind solltest du immer schälen!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Was ist die Stäbchenprobe?</h2>



<p>Wenn du dir nicht sicher bist, ob deine Muffins schon genug im Ofen gebacken hat, kannst du die „Stäbchen-Probe“ durchführen. Dazu nimmst du beispielsweise einen Zahnstocher oder längeren Holzspieß und pickst einmal tief in die Mitte des Muffins hinein. Ziehst du ihn raus und es klebt Teig am Holz, dann ist er noch nicht durchgebacken. Wenn der Zahnstocher nahezu sauber wieder herauskommt, ist dein Muffin perfekt!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Anleitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Rhabarber schneiden</h3>



<p>Zu Beginn widmest du dich dem Rhabarber. Wasche ihn kurz ab und schäle ihn. Danach schneidest du ihn in kleine Stücke und stellst alles zur Seite.</p>



<h3 class="wp-block-heading">2. Schritt: Muffinteig anrühren</h3>



<p>Für den Teig gibst du zuerst alle trockenen Zutaten in eine Schüssel: Verrühre diese kurz mit einer Gabel und ergänze anschließend den pflanzlichen Joghurt, Pflanzendrink, Öl und die pürierte Banane. Verbinde die Zutaten zu einem einheitlichen Teig. Danach hebst du die Rhabarber-Stückchen unter.</p>



<h3 class="wp-block-heading">3. Schritt: Muffins backen</h3>



<p>Heize den Ofen auf 180°C Ober-/Unterhitze vor. Verteile den Teig in die Muffinförmchen und stell das Blech auf die unterste Ofen-Schiene. Backe sie für 25 Minuten: Du kannst zum Ende der Backzeit die Stäbchenprobe durchführen, falls sie noch zu wenig gebacken aussehen. Danach nimmst du die Muffins aus der Backform und lässt sie vollständig abkühlen.</p>

<h3 class="wp-block-heading">4. Schritt: Creme vorbereiten</h3>



<p>Bei der Zubereitung der Creme beginnst du damit, den pflanzlichen Frischkäse mit der Lebensmittelfarbe kurz cremig zu rühren. Danach gibst du Puderzucker, Schlagcreme und Sahnesteif hinzu und schlägst die Creme steif. Stelle sie so lange in den Kühlschrank, bis du sie weiterverwendest.</p>

<h3 class="wp-block-heading">5. Schritt: Dekorieren</h3>



<p>Auf die vollständig ausgekühlten Muffins spritzt du nun die Creme: Fülle diese dafür in einen Spritzbeutel mit einer großen Sterntülle. Setzte den Beutel in der Mitte des Muffins an. Spritze eine untere Schicht und eine zweite direkt darüber, ohne die Tülle zwischendurch abzusetzen. Danach stellst du den Muffin direkt in den Kühlschrank. Vor dem Verzehr kannst du sie noch mit Topping verfeinern, ich habe kleine silberne Sternchen gewählt. Genieße deine Cupcakes!</p>

<h2 class="has-black-color has-text-color wp-block-heading">Mit was kann ich das Crumble servieren?</h2>



<p>Um es noch etwas &#8222;aufzuhübschen&#8220;, kannst du etwas Puderzucker darüber streuen. Als kühlen Kontrast zu der warmen Nachspeise würde ich dir auch eine Kugel Vanille- oder Fruchteis dazu empfehlen, das schmeckt sooo gut! Vegane Schlagcreme passt auch super gut dazu, nimm einfach worauf du am meisten Lust hast.</p>



<h2 class="has-black-color has-text-color wp-block-heading">Muss ich Rhabarber schälen?</h2>



<p>Im Rhabarber steckt vergleichsweise viel Oxalsäure, weshalb von dem rohen Verzehr abgeraten wird. Der meiste Teil davon befindet sich in der Schale, was der Grund dafür ist, dass er bei den meisten Rezepten geschält wird. Außerdem gilt: Je grüner der Rhabarber ist, desto mehr Oxalsäure enthält er. Auch die Stängel, die nicht mehr allzu frisch sind, solltest du immer schälen!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Anleitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Streusel vorbereiten</h3>



<p>Verrühre Haferflocken, Haselnüsse, Mehl und Vanillezucker in einer Schüssel. Dazu gibst du die vegane Butter und Vanillepaste und knetest die Zutaten zu einem gleichmäßigen Teig. Dabei kannst du entweder mit den Händen arbeiten oder eine Küchenmaschine mit Knethacken verwenden.</p>

<h3 class="wp-block-heading">2. Schritt: Kirschen abschütten</h3>



<p>Als nächstes schüttest du den Kirschsaft aus dem Glas ab und kannst ihn trinken oder anderweitig weiterverwenden: Zum wegschütten ist er zu schade! Die Kirschen kommen in ein großes Sieb und dürfen, bis sie in die Auflaufform müssen, in Ruhe fertig abtropfen. So hast du später nicht allzu viel Flüssigkeit in deinem Crumble.</p>



<h3 class="wp-block-heading">3. Schritt: Crumble fertigstellen</h3>



<p>Heize den Ofen auf 190°C Ober/Unterhitze vor. </p>



<p>Danach wäschst du den Rhabarber ab und schneidest die holzigen Enden weg. Dieser wird anschließend geschält, in Stücke geschnitten und mit Sauerkirschen und Stärke in der Auflaufform miteinander vermischt. Verteile darauf die Streusel und schiebe dein Crumble für 35 Minuten, auf der untersten Schiene, in den Ofen! Sobald die Zeit abgelaufen ist und die Streusel schön braun geworden sind, nimmst du es aus dem Ofen und genießt dein Crumble warm. Dazu passt gut etwas Puderzucker, vegane Schlagcreme oder auch Eis!</p>

<p>Es ist Rhabarber-Zeit und du weißt nicht, was du damit anstellen sollst? Ich schon! Probiere doch mal dieses leckere Rhabarber Rezept aus: Es ist vegan, säuerlich frisch im Geschmack und schnell zubereitet. Die Kekse bilden dabei einen super Kontrast zu der Rhabarber-Schicht! Plane lediglich etwas Kühlzeit ein, dann kannst du dich auf deinen Nachtisch oder den Frischekick für Zwischendurch freuen!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Darf man Rhabarber roh essen?</h2>



<p>Im Rhabarber steckt vergleichsweise viel Oxalsäure, weshalb von dem rohen Verzehr abgeraten wird. Der meiste Teil davon befindet sich in der Schale, was der Grund dafür ist, dass er bei den meisten Rezepten geschält wird. Ich habe ihn jedoch nicht geschält, da die Säure durch das Kochen minimiert wird und erst ab einer gewissen Menge schädlich auf den Körper wirkt: Doch, wenn du auf Nummer sicher gehen willst, lieber immer schälen! Außerdem gilt: Je grüner der Rhabarber, desto mehr Oxalsäure ist darin. Auch die Stängel, die nicht mehr allzu frisch sind solltest du immer schälen!</p>



<h2 class="has-black-color has-text-color wp-block-heading">Wie viel Kühlzeit sollte ich einplanen?</h2>



<p>Du solltest etwa eine halbe bis eine Stunde Ruhezeit im Kühlschrank einplanen, um das Dessert auf Normaltemperatur zu bekommen. Um noch den kühlenden Effekt zu erreichen, würde ich es für mindestens 2h kühl stellen! Es schmeckt bei beiden Varianten super gut, also probiere es einfach aus.</p>



<h2 class="has-black-color has-text-color wp-block-heading">Schritt für Schritt Anleitung:</h2>



<h3 class="wp-block-heading">1. Schritt: Rhabarber kochen</h3>



<p>Als Erstes wäschst du den Rhabarber ab, entfernst das holzige Ende und mögliche schadhafte Stellen. Schneide ihn in kleine Stücke und fülle sie in einen Topf. Mit hinein kommt das Wasser, die Banane und die Datteln: Stelle die Temperatur nach oben und lass den Rhabarber für 3-5 Minuten unter gelegentlichem Rühren sprudelnd kochen. Sobald er weich ist, gibst du das Agar Agar dazu und lässt es nochmal 1-2 Minuten köcheln.</p>

<h3 class="wp-block-heading">2. Schritt: Pürieren</h3>



<p>Anschließend die Temperatur abstellen und den entstandenen „Brei“ in eine Küchenmaschine füllen. Kräftig pürieren lassen, bis keine Stückchen mehr vorhanden sind und alles schön einheitlich cremig ist.</p>

<h3 class="wp-block-heading">3. Schritt: Dessert schichten</h3>



<p>Fülle das Püree sofort in deine Dessertgläser und lass es auskühlen. Danach nimmst du die Gläser wieder aus dem Kühlschrank, befreist den Rand von den entstandenen Wassertropfen und bröselst je zwei Kekse pro Dessertglas auf die Rhabarber-Schicht. Du kannst jeweils noch eine Dattel halbieren und oben in die Mitte legen. Lass es dir schmecken!</p>
